Epazote has a strong yet difficult to describe fragrance! Sometimes compared with citrus, savory, or mint, it is commonly used in Mexican cooking to add a sweet mild flavor and is regarded as the ultimate companion herb to use when cooking black beans. Also reputed to be an anti-flatulent.
