Wheatgrass is nutrient-rich grass that is a part of the wheat family. It is a great source of amino acids, minerals and vitamins. The leaves are often used for juicing, in smoothies, or can be tossed straight into your favorite salads. The leaves should be harvested with shears when around 7" tall, just before the grass starts to split or form a second grass leaf.
